Collard greens and kale (Brassica oleracea var. acephala, Brassicaceae) are various loose-leafed cultivars of the cabbage plant. This kind of cabbage does not have the usual close-knit core of leaves ("head") of regular cabbage. The oval-shaped, dark green, long-stemmed leaves of collard and the smaller and crinklier leaves of kale are borne in a rosette fashion around an upright, stocky main stem.
