OAES horticulture researchers are looking at what happens when plant bacterial spot attacks bell peppers. They wanted to look close-at the cellular level-to see what defense mechanisms go into action when a pathogen threatens.
3/4 cup bell pepper, ground 1 cup apple cider vinegar 1/4 cup jalapeno peppers (seeds ground) 1 bottle liquid pectin 5 cups sugar Green food coloring Mix together peppers, sugar and vinegar. Bring to boil. Boil 5 minutes. Cool. Add pectin. Add green food coloring.

Nutrition: Bell peppers are chock full of vitamin C and A. Red bell peppers also contain lycopene, a carotenoid that can help protect against certain cancers such as prostate and cervical cancers.
Lesions in fruit appear initially as small, raised pimples that are a slightly lighter green than the normal fruit color. They enlarge and turn brown to black and appear as raised warts or scabs
Procedure: To prepare the peppers on a gas burner, hold the pepper over the flame using tongs or a kitchen fork. Turn the pepper and roast until the surface is evenly charred. The pepper should be almost completely black in color.
