The anti-cancer chemical in broccoli may be more plentiful in broccoli sprouts. The sprouts have high levels of sulforaphane without the same taste of mature broccoli.
Put broccoli in a steamer over boiling water. Steam for 3 minutes; broccoli will turn a bright green. Remove from heat; allow to cool to room temperature for easier handling. Toss with remaining ingredients.
Compounds in broccoli, cabbage, and brussels sprouts can boost production of phase II enzymes and reduce breast cancer risk. At the ACS national meeting, a researcher reported that a synthetic broccoli compound provides the same benefits and is less toxic
