Cabbage juice is placed in a large flask. Vinegar is added to the point of color change. Aqueous ammonia is then added to the point of color change. Vinegar is then added again to show the reversibility of the color change.
The cabbage head is an unexpanded stem surrounded by overlapping fully expanded leaves. The leaves are usually shredded or cut away from the stem, and the stem itself is rarely eaten. Color is green or purple.
Although we've had several variations of this salad, the best by far is the one from Eudice Greenfield, our dear friend in Skokie, IL. This is a surprisingly refreshing, crisp, and crunchy salad. It's great as a first course or to accompany other Asian flavored dishes.
Lutein, which appears to reduce the risk of cardiovascular disease and stroke as well as guard against age-related macular degeneration (which leads to blindness), is also abundant in pumpkins.
