Here is a picture of skunk cabbage (so i believe) that I saw at the Portland Audubon. What I found interesting about it was that it was practically growing in the water. I have always thought that it grows on dry land? Is it common for it to grow in water?

Rinse and core cabbage. Carefully remove 10 outer leaves, place in saucepan and cover with boiling water. Simmer 5 minutes. Remove and drain cooked cabbage leaves on paper toweling.

The cabbage has always been considered wholesome, and in antiquity it was thought to have medicinal properties. Modern science has found that both the ancients and popular belief were on the right track; it is indeed quite nutritious.
